2 tbsp fresh coriander, roughly chopped

1 cup smooth peanut butter

2 garlic cloves, crushed

1 long red chilli, sliced (optional)

½ tsp ground cumin

¾ cup coconut milk

½ cup water

1 tbsp soy sauce

1½ tbsp kecap manis

Juice of 1½ limes

3 bok choy, roughly chopped

1 capsicum, roughly chopped

250g green beans, trimmed and cut into thirds

Garnish with sesame seeds and serve with rice

METHOD

  1. Preheat the oven to 180°C.
  2. In a large bowl, combine the mince, carrot, spring onions, garlic, egg, breadcrumbs, ground coriander and fresh coriander. Mix until well combined, then roll into 16-18 meatballs.

  4. Scatter the bok choy, capsicum and green beans over the satay sauce and gently toss to coat.
  5. Nestle the meatballs amongst the vegetables in a single layer.
  6. Bake for 30 minutes, turning the meatballs halfway through cooking and spooning some of the sauce over the top to baste them as they cook.
  7. Once the meatballs are golden and cooked through, remove them from the oven.

Garnish with sesame seeds and serve with steamed rice.
