1 tsp smoked paprika

8 sundried tomatoes, finely chopped

300ml passata

400g tin diced tomatoes

2x 400g butter beans, rinsed and drained

1/3 cup vegetable stock

¾ cup Greek yoghurt

½ cup grated parmesan cheese, plus extra to serve

100g baby spinach

Zest of 1 lemon

Juice of 1 lemon

¼ cup parsley, roughly chopped

  1. Heat the oil in a large frying pan over medium heat. Add the onion and cook for 8-10 minutes, stirring occasionally, until softened and lightly caramelised.
  2. Add the garlic, tomato paste, smoked paprika, oregano and chilli flakes. Cook for 1 minute, stirring, until fragrant.
  3. Stir in the sundried tomatoes, passata, diced tomatoes, lemon zest and juice. Bring to a gentle simmer and cook for 10 minutes.
